Yeast-Free Pancakes
INGREDIENTS
- 1 cup brown rice flour
- 3 tablespoons tapioca flour
- ⅓ cup potato starch
- 1 packet of stevia
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- ½ teaspoon guar gum
- 2 eggs
- 3 tablespoons olive oil
- 4 tablespoons yeast free milk alternative
- 1-2 cups filtered water

PREPARATION
1. In a bowl, mix together the brown rice flour, tapioca flour, potato starch, stevia, baking powder, baking soda, salt, and guar gum.
2. Stir in eggs, milk, and oil
3. Add water a little at a time until batter reaches a good consistency (not too watery, but not too thick)
4. Spray a large skillet or frying pan with cooking spray
5. Spoon batter onto skillet and cook until bubbles begin to form
6. Flip, and continue cooking until golden brown on bottom
7. Enjoy immediately or freeze for later use
